The Healing Chicken Soup
This soup is on repeat in my house. It's soothing stock, sweet carrots, tender chicken and homey smells have been a great source of comfort to me. With a slow 4-hour simmer, it not only fills my home with memories of my grandma's apartment, but its healing bone broth qualities nourish me on the inside too. Expect a mild flavor that's easy on the belly. I love it so much, I even have it for breakfast!
Ingredients

1 whole organic chicken or 4 chicken breast with skin on the bone

8 carrots - cut in half

2 bunches of scallions - greens only

1 head of parsley - stems included

2 cloves garlic (optional)

2" of ginger - rough chopped

1 T Kosher or Sea Salt

1 T Turmeric

Instructions

Place chicken in an extra large stock pot. Cover with vegetables, spices and filtered water until water reaches 8" from top of stock pot.

Bring to boil and then cover and reduce to low simmer for 4 hours.

Remove chicken and place in a bowl.

Using a slotted spoon or thongs, remove as many vegetables as possible.

Strain broth. I place a small strainer on a wide mouth 64oz mason jar and pour broth through strainer into the jar. You may need to use another 32oz mason jar you have a lot of broth.

Shred chicken and chop carrot. I keep my chicken and carrots separate from the broth. This way I can enjoy just the plain broth or add as much chicken and carrots as I like.

Salt and pepper to taste.

Compost remaining vegetables and bones.
Time: 4.5 hours
Makes: Depends on the size of your stock pot. At least 64 oz.
